Chef Michael Collantes holds a Michelin star at Soseki Modern Omakase in Winter Park and has spent more than twenty years in kitchens alongside Wolfgang Puck, Joël Robuchon, Eric Ripert and Masa Takayama. Sushi Saint is his everyday sushi: fast, generous and made right in front of you.
